Altavolo add quite a number of innovative and surprising tastings - many of them
finished with theatricality directly in the dining room - until the conclusion of the meal with a dessert

Very few tables in a small room with a characteristic star-shaped ceiling in Lecce stone,
with the surprise of the candlelit outdoor service: this Primo Restaurant, or the place
where Solaika Marrocco, born in 1995, born not far from Gallipoli, expresses her personality of
modern cook in dishes that are beautiful for the eye, exquisite for the palate. In spite of the very young
age, the chef is already able to offer a cuisine of refined and elegant simplicity, never le
older and more traditional recipes that Solaika enjoys reinventing with a decidedly style
contemporary and original, if not downright audacious.

A Piedmontese cook arrives in Salento and the contamination takes place in this small place on the edge of the historic center, where the raw materials of the area are interpreted with an unprecedented eye. The mix of inspirations works better in some dishes than in others. This is the case with the egg with lard and bottarga and the linguine with yellow cherry tomatoes and "sponsali" (onions). On the edge of the baroque fury of the narrow streets of the center. at Alex's tables there are some indispensable certainties of seafood cuisine, superb raw materials, a whispered temptation of the avant-garde, moderation in cooking and prudence in the choice of ingredients: this is the secret, little secret of this place. It is therefore necessary to start from the index of this 'tale of the sea, the raw ones. Absolutes, which are also protagonists in the first courses with the prawn tartare on risotto with clams. Snapper with white cabbage enriches the propellers with garlic, oil and chilli pepper. Fried food is dry and variegated; the battered cod is good. Adequate wine list with the right mark-ups. The local culinary tradition at its best, celebrated in the heart of Lecce behind Piazza Sant'Oronzo - by the dean of Salento chefs Gigi Perrone. He starts from the poor "grandmother's" kitchen to consign it to history and at the same time surpass it, with homemade bread soup with sautéed Pollino mushrooms, chives and wild thyme extra virgin olive oil. The Mediterranean bluefin tuna tartare with dried tomatoes, green apple and mint soy is fresh and balanced. The rack of lamb from Alta Murgia with wild rosemary and red garlic is good. It ends with a hot dark chocolate cake, vanilla honey sauce and salted pistachio ice cream. Good quality cellar. Accurate and professional service. I count on 55 euros.

At the gates of the historic centre, along the walls of the Charles V castle, in Lecce there is a sort of quadrilateral which concentrates interesting clubs and restaurants in a few meters. Among these is the Makani, which in addition to Japanese-inspired cuisine, also has Italian seafood dishes on the menu. Elegant environment, two internal rooms and an outdoor area, with warm and essential lines. Valid sushi and sashimi in classic formats, thanks to the high quality of the raw materials and the long experience of the chef. Taste the touch of sweetness and acidity of the hosomaki with strawberry or the drop of Tabasco of the crispy uramaki with salmon. The tempura is crunchy and dry, with Middle Eastern incursions such as small vegetable samosas. The traditional Japanese dishes are excellent: miso soup, with seaweed or fish, and teriyaki polio.
