The cooperative, founded in 1922, uses milk from the Parma and Enza valleys
conferred by the members. The raw material is produced by cows fed fodder
of stable centuries-old meadows. The dominant notes of their 24 months are of cooked lactic
and dry hay, followed by ripe pineapple. Tendring to be savory in flavour, it is noticeable
good roundness when chewed. Sincere.
