Founded in 1933, today the Allegro dairy is managed by a group of young people, attentive to do not betray the peasant teaching that this cheese should be produced without it haste: for this reason their forms never mature for less than 18 months. The milk they use is awarded by the members, so as to guarantee a short supply chain: these are companies from territory, scrupulously controlled. The Parmigiano Reggiano DOP tasted during the course of the panel has matured for 24 months. An intense cooked lactic is the predominant smell, but also butter and toasted, dried mushrooms, nutmeg. A beautiful harmony that is confirmed in the aromas retronasal. Excellent balance of flavors with high chewing, where sweetness, flavor and acidity balances pleasantly. The taste persistence is quite high. Harmonious.
