The Antica Cascina is located in the hills of Romagna; here, their pit cheese,
produced with sheep's milk, it matures for two months in Villa Corte, a noble residence
of the eighteenth century, before being sunken as per tradition. On the nose, their shape
expresses hints of cooked and acidic lactic, sheep and a slight citrus; characterized by
a medium-high intensity, are confirmed in the aromatic sensations. The flavors are
decisive, with a prevalence of sweetness that divides the palate with acidity. One is underlined
pleasant freshness linked to the lactic-acidic, animal and sweet notes.
