A small cooperative that raises cows, including Modena ones, fed with green fodder and cereals: everything is done on the farm, where the cultivated pasture lands are subjected to five-year rotation of cereals. The consortium is also the project leader "Mountain Parmigiano Reggiano: the challenges of quality in climate and food evolution markets" When tasted, the Parmesan is 24 months old and presents fresh smells of lactic and fruit with slight drier notes; hints confirmed in the aromas during chewing.
