COMPANY. La Rocca was founded in 1963 in Castell'Arquato, a village in the Piacenza Apennines. Behind it a long tradition and a stable presence in the Typical Piacentini Salumi Consortium, some of which (coppa, salami and bacon) boast the DOP. The heirs of the founding families, Orlandi, Corvi and Magni, today lead a company capable of reconciling quantity, quality and respect for the environment thanks to a photovoltaic system and an activated sludge treatment plant. The raw materials come from heavy Po Valley pigs born, raised and slaughtered in Emilia Romagna and Lombardy, from which, in addition to the Piacenza DOP, a wide range of cured meats present in the list of Traditional Agri-Food Products is produced.
PRODUCTS. The cup interprets the type already by the slice in a classic and masterful way, with the white fat that creeps into the lean ruby red. Multifaceted nose, of damp earth, seasoned came, clean cellar, tobacco and deep roasts, with hints of sweet paprika. On the palate a nice mix of sensations that retrace the sense of smell, enriched by ample vegetable and floral notes, of fresh mushrooms and cyclamen, on a sweet-savory balance of extreme solidity and refinement. Closing of great elegance and ease: a real walk in the woods. II Mandolino is a typical culatta in shape and tone, intense in the aromas of seasoned pork, Parmesan, spices and dried fruit, accompanied by the buttery tones of the adipose part, very present. Potable balance characterized by notes of fruit, toasted hazelnuts, well-seasoned meats and surprising caramel sensations, which give sweetness to a finish of excellent structure and juiciness.
