COMPANY. The company was founded in 1940 by Gaetano "Tanino" Piazza in Ponte dell'Olio, a town in the Piacenza area located at the point where the Val Nure narrows and the southern part of the Po Valley on the foothills of the Ligurian Apennines. On these hills, between wooded areas and the Nure River, over 80 years later, the San Bono salami factory is still run by the same family, now in its third generation. Traditional methods and ancient recipes, combined with modern technologies, yes materialize in a production of cured meats that has its punts products in the three Piacenza PDOs, coppa, pancetta and salami, followed by lard, bacon, flakes, lombelli, fresh and seasonal sausages.

PRODUCTS. Beautiful inviting face for this rural-chic style peasant bacon, true and vivid. The nose is sweet and precise, of seasoned pork and spicy travel companions (garlic, pepper, hints of cinnamon). A promise kept on the palate, where sweetness meets good sapidity and a return of spices in a particularly melting fat structure. The classic kind is a youthful salami, a little fresh but pleasant, with lively aromas and flavors centered on medium-aged meat, light hints of garlic, pepper, spices, wine, cellar and citrus hints; sweet and balanced taste in a melting bite. The Piacenza salami has a slice of young cured meat, with a true and immediate aromatic profile, played on notes of medium-seasoned pork carpi, garlic, spices and memories of the cellar, with a very light metallic note at the end of the mouth; balanced taste in a discreet structure.
