COMPANY. In Soragna, in the heart of the Basso Parmense area, Antica Ardenga is a beautiful pork butcher with a transformation laboratory and maturing cellars. The meat comes from local and national heavy pigs slaughtered at 13 months when they have reached 200-210 kilos in weight. The point of arrival is a production of traditional salami from the Terre Verdiane, made in an artisanal way with manual salting and binding, the final stages of seasoning in naturally ventilated cellars. The purebred horse of Antica Ardenga and the culatello di Zibello Dop, then Parma ham, raw shoulder of Palasone, culatta, coppa, the classic national cured meats, salami, cooked and pot specialities.
PRODUCTS. An excellent interpretation of culatello di Zibello: typical, expressive, elegant, harmonious, very clean. The slice is an oversized petal, with a rose of fat in the center that creeps into the well-marbled lean. Nose and mouth are sweet, complex and at times exciting, with the well-seasoned meat accompanied by lovely notes of toasted hazelnuts, floral references, memories of the cellar, butter pastry, Parmesan and crusty bread. Sapidity compensated by a great sweetness, good persistence, excellent fat, soft and juicy against a slightly dry lean. Different shades of pink for the cooked shoulder. Its strengths are the balance, the delicacy and the cleanliness of the sensations in an aromatic profile of discreet persistence, dominated by good hints of cooked meat, with vague hints of toasted and caramelized, spices almost absent. Enjoyable fat, excellent structure, soft and melting.
