COMPANY. La Malintesa is a closed-chain organic farm located on the left bank of the Arda stream, in the Basso Piacentina area next to the Parma area, a borderland between Lombardy and Emilia Romagna. It produces fruit, vegetables, arable land and cured meats made with the horns of its own pig farm. The marketing is also managed by the Carletti family, through the agri-shop with refreshment in the center of Cremona, where you can taste platters of the maison's cured meats accompanied by natural wines. The pigs, a cross between black Parma and large white pigs, are fed on organic cereals and legumes almost entirely from the farm, without the use of antibiotics and medicated feed, but are slaughtered after a year and a half of age. The dogs are processed on the farm, mostly in winter and without preservatives, as the ancient butcher tradition dictates, and always naturally seasoned on the farm.
PRODUCTS. In the culatello, the intense bordeaux red muscalo dotted with tyrosine crystals and the mother-of-pearl fat bear witness to the "leg" of the black pig and a long seasoning. A seasoning that perhaps went a little further, penalizing this culatello which is beautiful to the eye with great gustatory potential. Very intense, complex and "dark" Pata Negra style nose, with slightly "over" fats, where the oxidation has the purpose of expanding the baggage of perfumes and aromas, in this case: parmesan and umami, dried fruit in candied shells, pastry, roasted coffee and barley, carob, cellar in an animated and slightly bloody background. Sweet and slightly astringent mouthfeel with a bitter finish. Excellent consistency and chewability, buttery, thanks precisely to the seasoning.
