From this place in the Marche which I would say is known for the production of egg pasta, I wanted to try the "chitarrine" one evening with some important guests at home, long-time friends from the film/television world with whom I worked in the past while passing through Milan reduced by the Venice festival, I had a good sauce available thanks to the spices used and I wanted to experiment.

The result?

I would say simply exceptional, they called me the next day specifically to compliment me while they were speeding home, they appreciated the excellent digestibility of the egg pasta, confessing their skepticism to me when I suggested it for its digestibility since we were at dinner and not at lunch, I am a novice cook or rather, a gourmand forced by the events of recent years to survive and try to eat well.

I have always liked going to restaurants, there is nothing to do, I have really tried them at all levels and in different countries around the world, furthermore I have been the editor of the official restaurant guide on the internet for 29 years.

I really know many famous cooks and chefs in person and I have also eaten with many of them, so I never allowed myself to compare myself with those who really know what they are doing in the kitchen, I am and will always remain a good customer of theirs.

I can fully say, however, that I wouldn't be surprised to find this pasta in a medium-high level or absolute high level restaurant, certainly seasoned with one of their sauces which will probably be better than mine.
