Between Brucoli and Augusta, The Ronsisvalle family pizzeria is an excellent example of a great balance of value for money. The furnishings are pleasant, simple and functional. Good choice of raw materials, from flours to topping. Flours are stone-ground, doughs are highly hydrated. The process, including maturation and leavening, lasts 72 hours. The bread is of own production, ideal as appetizer 'cunzato" (stuffed) with capers, red onion, oil, salt, pepper and oregano. Three types of dough are available, a classic one, a whole wheat one, or a mix of cereals and seeds. Among the options in the choice of dough, also the stuffing of the edge with ricotta cheese. There are two lines of pizza on the menu, traditional and contemporary, plus "pezzoli". Among the traditional ones, the 007 with San Marzano organic tomato sauce, mozzarella, fresh mushrooms, peas, egg, cooked ham, olives, evo and oregano, the Amatriciana with Amatrice bacon, chili pepper, pecorino cheese, evo oil and oregano. Among the contemporary ones, the finocchietto selvatico, with mozzarella, baked potatoes, confit tomato, smoked bacon and wild fennel pesto, the Trevigiana, with mozzarella, baked radicchio trevigiano, cherry tomatoes, bresaola, lemon zest and evo oil. Among the pizzoli, the Broccolone, with mozzarella, sausage and broccoli. Possibility to choose gluten-free pizzas. Craft beers and some local labels.
