Already praised for the quality of his Table, the chef Geoffroy Maillard (who is most notably an alumnus of Eric Frechon), is not resting on his laurels. He has entirely redesigned the interior of his restaurant, which is now modern and pared down. Meanwhile, his cooking remains as sincere and inspired. Quite a treat!
