DEL TERRITORIO - ROMANTICO m-3-forchette-r Fabulous location for a structure that from an architectural perspective looks like a castle, in fact it was born as a customs house on the Po net '300. Today it is one of the temples of culatello, but apart from the famous saiume, here almost everything is bred or cultivated on the property. The dishes exalt local traditions from pasta to farmyard animals; it is a "gastrofluviaie" cuisine, as chef-patron Massimo Spigaroli likes to call it, because it contributes to not letting the territory lose its identity. The museum itinerary is also interesting, presenting, one after the other, the protagonists of the culatello story; iconography and quotations of personalities tell the punctual story of the phases that from the pig's leg lead to a product characterized by a precise tasting ritual. The visit also allows you to observe the fascinating gallery of culatelli, which mature in the humidity and shadows, as well as the wheels of parmesan cheese: the two riches of the area! The inspector recommends: for a romantic dinner book the only table - in the small niche with only glass windows - which offers superb views of the green.
