The Salvo brothers, the third generation of pizza makers, are stall protagonists of an extraordinary journey in Beijing, proving to be excellent entrepreneurs. They launched Bottega in late 2014, and then doubled the premises, adding the Vesuvio bar and the new format, Forno, a Roman osteria with pizza by the slice (the second opening is happening as we go to press). In Sanlitun's place, we found a Neapolitan round really well cooked in the wood-fired oven, the Marmara soft in the dough and incisive in the flavors, as well as the mini fried pizza or the classic Genoese.
