There are eleven cheesemakers who have passed the baton in this regard over the years
dairy farm founded in 1953. Currently there are young people - but already rich in experience -
Christian and Claudia. The terroir is that of the Apennine valleys, where the forms
they mature for at least twelve months; for this reason since 2013 the Parmigiano from this dairy
it is certified "mountain product", a quality project of the Parmigiano Consortium
reggiano whose mark is affixed to the twenty-fourth month. Their 24 months, al
the nose primarily recalls notes of freshness and cream; then dried fruit and more
fresh fruit and undergrowth. Smells that are confirmed by the aromas during chewing,
together with a good sweetness which is accompanied, at a lower level, by acidic and salty flavours.
The solubility and friability of the structure are also good, quite high
taste persistence. A jewel of the Apennines.
