Founded in Macerata, its name already condenses its connection with the territory it includes the valleys of the Esino, Chienti and Potentino rivers. The pits in which he matured for six months they are dug into the sandstone and the pitting method is the traditional one, with the cheese placed in numbered white cotton bags and the pit closed with a lid of wood and sealed with plaster. On the nose it presents odors of medium-high intensity: undergrowth, cooked lactic and butter, confirmed in the retronasal aromas. Slightly spicy in the trigeminal sensations, its compact and unctuous structure. Balanced and full, it has a pleasant sweet note that persists in the mouth: an excellent representative of its category.
