In addition to cured meats from Aosta Valley cattle, it is also famous for those made with roe deer, deer, chamois and copra meat. Cattle and goats are raised in a semi-wild state in summer and in fixed stabling in winter.

PRODUCTS. The motzetta, made with Aosta Valley beef, is a product with great flavor balance and excellent seasoning; It is characterized by its visual similarity to bresaola, but allows intense spicy notes to emerge, which are followed by fresh sensations that vaguely recall citrus fruits. On the palate it is well balanced and extremely enjoyable thanks to a pleasant juiciness that makes you want to try the second slice. The lard is interesting, standing out for the excellent quality of the fat and the delicate olfactory sensations. On the palate the flavor goes a little further and tends to cover the pleasant olfactory notes. Salè is a salted and flavored meat (a sort of spiced roast beef), which exudes intense aromas of garlic and wine. When pruned, the spiciness is dominant and persistent.
