COMPANY. Artigianquality is today the only company that produces artisanal mortadella in the city of Bologna. Founded in 2015 by Simona Scapin, daughter of art (her father Silvio has a butcher-rotisserie in the capital of Bologna), the salami offers different variations following the recipe developed by the parent: selected and organic meats of heavy pigs from farms in the semi-wild state on the hills of Bologna, processed from fresh, no flour, milk derivatives, added polyphosphates, synthetic flavourings. Mace, cardamom, nutmeg, black and white pepper, fresh garlic from Voghiera Dop are the condiments for mortadella with a delicate and clean aromatic profile: two Slow Food Presidia, Ia Classica and Ia Mora Mora (from Romagna blackberry meat), (a biological Sette Chiese, the delicate Galliani (also with pistachio and truffle), the fragrant Simona (with gala fat and rich in spices), in addition to pink salami, the ancestor of mortadella.

PRODUCTS. Don't expect a pervasive mortadella: this is a delicate interpretation of Bolognese cooked salami, consistent with the Artigianquality style. Classic in its lively and inviting appearance and in a taste-olfactory profile that focuses on cleanliness, good raw material and calm sensations: lively cooked meat, light spiciness, balanced and gentle mouthfeel in a soft and velvety bite. A mortadella that is not too complex but honest and enjoyable. The pluses of Artigianquality pink salami are the typical appearance of a more rustic mortadella, the cleanness and the very juicy, soft and melting structure. The cooked good almost dominates the aromatic path alone, barely accompanied by spices, in a well-balanced flavor on the palate.
