COMPANY. We are in Borgonovo Val Tidone (PC), where the Po Valley meets the first offshoots of the Ligurian Pre-Apennines. An area with a historic agricultural vocation, where in 1976 Claudio Capitelli, coming from a family with an ancient tradition in the food sector, founded the ham factory. Today the company, led by his son Angelo, is ready for the third generation. Specializing in cooked charcuterie products, Capitelli has focused, since the very beginning, on the genuineness and barity of flavors, using meat from trusted Italian farmers.
PRODUCTS. Precursor, since 1994, of the line of so-called "cooked out of mould", San Giovanni conquers the eye with the generous section of the slice, marbled and with a strong pink . Intense nose, with extremely pleasant and clean biscuit notes, warm tones of cooked meat and light spiciness. Great delicacy, sapidity wisely dosed on the palate, vanilla and fresh, with a juicy finish and a gentle and elegant chewiness. Extra large bacon, obtained from two large cured bacon, flavored with spices and herbs, finally tied together before cooking in 3 stages. Characteristic notes of noble wood smoking and hints of ripe fruit on the nose. Slightly prevalent sapidity, with a highly aromatic taste-olfactory structure, hints of biscuits and a well-balanced fatty part. Good chewability and meltability for an extremely pleasant and clean product. Old pink shoulder, slightly marbled and large, with a smoky effect that monopolizes the sense of smell; more delicate to the potato, supported by a pleasant sweet-savory balance, with biscuity tones and good structure, slightly resistant to chewing.
