COMPANY. The Officine Gastronomiche have enriched the Spadoni brand since 2014, when the historic family brand, born in the fifteenth-century mill of Coccolia (RA) and which today, in dedicated plants, has over 200 references between flours and special blends, alongside a project to enhance local products. This is how the inn was born, a dairy that produces traditional Romagna cheeses from high quality milk, and the ambitious project of recovery of the mora romagnola, a precious native pig breed in the process of being extinction. The blackberries live in a semi-wild state in an area of ​​over 90 hectares on the hills of Brisighella, following a natural diet; the fresh meats, as well as the cured meats obtained, are processed in compliance with the best traditions.

PRODUCTS. In the cheeks icy and vivid stratigraphy, furrowed by threadlike ruby ​​veins. An incisive note of sweet spices, cinnamon and mace emerges on the nose, with subtle hints of cloves.
