COMPANY. The reliefs that limit the small town of Carpaneto Piacentino just to the south represent a natural watershed between the wide Po Valley and the upper Tyrrhenian Sea. From eastern Liguria, the currents cross this wide orographic sign, characterizing the opposite side in the microclimate, naturally suited to the traditional production of cured meats. The company was born from the activity of Giordano Michelazzi, a native of Polesine Parmense and with three generations of butchers behind him: in 1983 he moved and expanded his business by choosing Carpaneto. Places where tradition lives and consolidates, fueling popular events and festivals, such as the Coppa Piacentina on the first Sunday of September.

PRODUCTS. At least six months of seasoning, in compliance with the specification, help to balance the extreme elegance of the sensorial palette of the Piacenza cup. Slice of red Levanto marble, delicate nose of noble moulds, lactic scents and light spices against a palate of maximum expressiveness: equal olfactory references and a supplement of dried fruit in shell in a sweet-savory alternation of melting length. Typically "Piacenza style". Red colored ham flake with a mother-of-pearl vibrancy. Extremely clean nose, balanced twist of spices and aromatic herbs, with a sweet approach to the taste and an expressive savory-umamic counterpoint to support a lovable persistence and good mustiness. Fun. The Pancetta della Mietitura, the belly of the pig complete with lard and rolled up, already expresses precision when sliced, with a pleasant oiliness. Lactic delicacy on the nose and a gentle spiciness with hints of cinnamon and mace. Soft chewiness and pleasant succulence.
