COMPANY. San Nicola is the brand to which the Parma Dop produced by Prosciuttificio Sole, founded in 1979 by Luigi Notari, are "signed". The factory is located near Corniglio (PR), at an altitude of 650m on the hills of Alta Parma, in the Tuscan-Emilian Apennine National Park, in a natural context rich in beech and chestnut woods and blown by the sea wind, which keeps balance temperature and humidity level. Also in this ham we meet the style of the house: balanced taste in sapidity and sweetness, typical aromatic profile but also influenced by evolved and slightly Spanish fats", which give a pinch of astringency but tend to broaden the range of sensations (in addition to seasoned meat and cellar, notes of toasted nuts in shell, pastry and melted butter) in a texture of excellent chewiness.
