COMPANY. Devodier has earned justifiable fame for its Parma ham, of which it offers one of the best interpretations. In its factory in Mulazzano Ponte, in the municipality of Lesignano de' Bagni but a few meters from Langhirano, on the other side of the Parma stream, it produces various lines of raw DOP, including Antiche Cantine, which reaches its peak with the Secretum ( 30 months), Le Eccellenze, up to 36 months of maturing, and Alta Tutela, with the two raw ham Antibiotic-Free and Animal Welfare, alongside the Organic raw ham, outside the PDO. In addition, raw shoulder, Emilia culatta and culatello.

PRODUCTS. A delicious and very elegant Parma Dop: marbled and composed slice, evocative nose of pastry, dried fruit in shell and salty breaths to accompany the good seasoned pork; in the mouth, shortcrust pastry, toasted hazelnuts, centrifuged butter, young Parmesan and light umami intertwine in a fantastic sweet-savory bite with excellent persistence and tactile meltiness. The raw shoulder is the rustic version of the DOP ham: the slightly evolved fats give sensations that recall certain Spanish jamòn, with the animal component and the cellar enriched with candied orange, toasted nuts in shell, butter pastry, intense human. More rustic, with a slightly more tenacious bite and a strong aromatic and gustatory complexity, but no less accomplished and elegant. The breech represents the Devodier style: visual and aromatic elegance, sweetness, cleanliness, persistence, excellent chewiness. A rustic tip accompanies the exuberant aromatic profile, but without losing precision and pleasantness.
