COMPANY. On the western border of Acquaviva, one of the castles of the Republic, San Marino Salumi was born in the early 90s, specializing in the production of cooked hams, immediately taking on the challenge of a high-end product , aware that the philosophy of "without haste, without comparison", in addition to making its cured meats more digestible, could represent the right path to growth in quality. A philosophy that is also expressed in the choice of raw material, Italian thighs from heavy pigs aged 1 1-12 months. The brand differentiates the products into different processing and packaging lines.

PRODUCTS. Elegance and determination already in the slice of bacon, of a gentle antique pink interspersed with a fat snow. Complex nose of aromatic herbs, pastry, cooked meat and umami, on a light and refined "smoke carpet". Palate of an invasive, clean and accomplished delicacy: again the smoky note to support, with extreme pleasure, the sweet-savory balance . Ideal complement to a convivial platter. Ham of great visual impact, with an extensive chromatic range of pinks. Wide olfactory palette: delicate tones of spices, wine and aromatic herbs, plus hints of biscuits. The taste is true and balanced, with sapidity well controlled. Mellow and juiciness on the palate, supporting a very pleasant chew. Culatta rosy and scented with cooked meat, toasted tomatoes and aromatic herbs, with vegetal flavors. Preeminent sweetness and smoke flavors, with balsamic aftertaste. A slight fibrosity counterpoints a sweet and juicy chewiness.
