COMPANY. The mission of the Casa family, who have always been in command of the ham factory created in 1976 in the Alta Val Parma by Graziano together with his wife Luisa, is the production of a high-profile PDO raw ham. The processing is artisanal although supported by the best technology: manual trimming and salting, maturation in traditional cellars with windows, where the hill air and the "sea" wind enter. The production includes different types of Parma Dop, a breech, a raw shoulder and a non-certified ham, obtained from oversized legs, also from the PP circuit, suitable for long maturation.

PRODUCTS. Il Cuor di Casa is a non-certified raw ham with a very complex aromatic profile, of a well-seasoned and at the same time youthful cured meat: references to toasted dried fruit in shell, hints of fruit white pulp, butter and pastry, acorn, umami, wood and dried leaves. Juicy and persistent mouthfeel, nice sweet-savory balance, precise fat and excellent meltability. The Parma 30 e Lode, aged over 24 months, is a tighter ham than the others from Casa Graziano. Tyrosine crystals in the orange-red muscle, salty nose, aromas of dried fruit in shell, memories of fresh and seasoned meat, parmesan butter pastry and cellar in the mouth balanced and precise and with a slightly dry structure. Ruby red slice well marezzota for the Dop Gran Riserva, a sweet, clean and very delicate ham but multifaceted in the taste-olfactory journey, with notes of dried fruit in shell, citrus peel, acorn, parmesan, butter pastry and cellar to accompany the seasoned meat. Medium persistence, barely evolved fats.
