Giuseppe Concordia's may seem to be one of the many bakeries that populate this city, but in reality it is a rarity, thanks to the use of flours from ancient grains and the use of sourdough for the production of the typical Bari focaccia. Rightly considered one of the best pizzas in town, Elite's pizza is characterized by a truly inviting fragrance and high digestibility. The doughs are leavened for a long time - from 72 to 96 hours - and the flours used vary according to the result you want to obtain: organic type 1, multigrain and seeds, with organic whole wheat Senatore Cappelli, gluten-free. There is also Scrocchiarella, with rice flour, potato and 80% hydration. To be tasted ('Apulia, a true hymn to the region, with yellow date tomato sauce, fiordilatte, capocollo di Martina Franca, Murgia cheese with ferments, tiled cardoncelli and basil oil. Not to be missed is the Divina, with yellow dates, pumpkin flowers stuffed with buffalo ricotta, fiordilatte, colatura di alici di Cetara and pumpkin seeds for a truly captivating texture. Always excellent the classics such as Romania with red base capers and anchovies.
